Searingly Addictive Breakfast Sausage Sandwiches
You may think you need to keep these on hand for those rushed mornings when you really need a solid breakfast but you’re already late. (We’re not going to talk about what you did the night before.)

But, we also know that you’ll always need these on hand in your freezer once you’ve had just one. They’re a perfect, comforting blend of flavors with a serious kick. Yeah, you’ll start your day right with one of these breakfast sausage sandwiches, and then you’ll have one for lunch, crave one at dinner, and if you managed to stay away that long, then they go down a treat as a late night snack with a beer.

It may look like a few steps, but these actually pull together quickly and reheat even faster. Get ready to become totally, permanently addicted.

Ingredients

For the Mad Dog breakfast sausages

¼ each Mad Dog 357 Dried Reaper Peppers (more or less to your heat preference), minced
1 pound (or a little more) Ground pork
2 cloves Garlic, minced
1 teaspoon Salt
½ teaspoon Onion powder
¼ teaspoon Black pepper
¼ teaspoon Dried thyme

For the sandwiches

8 each English muffins, sliced open
4 Eggs, beaten
1-2 tablespoons Oil, for frying
8 squeezes Ketchup

Preparation

Preheat your oven to 400ºF. Line a baking sheet with baking paper.

Combine the Mad Dog 357 Dried Reaper Peppers with the remaining sausage ingredients. Shape into thin, flat patties (roughly the size of the English muffins) – using gloves to protect your hands (seriously). Place patties on baking sheet and cook for about 15 minutes, flipping once (until cooked through). Remove from the oven and set aside.

Meanwhile, heat a teaspoon or two of oil in a non-stick frying skillet over a medium heat. When the pan is hot, pour in 2 tablespoonfuls (give or take) of the beaten egg, as if to make an egg pancake. Once set (after 30 seconds, perhaps a little longer), flip and allow the other side to set. Remove to a plate and continue until you’ve made 8 egg pancakes (feeling free to stack them on each other on the plate as you work).

When the Mad Dog sausages and egg pancakes are ready, assemble the sandwiches. Each one should get a spread of ketchup, a sausage patty, and an egg pancake (you may need to fold these, no big deal). If you want, a pinch of salt goes a long way on top of the egg. And, by all means, feel free to add a slice of cheese if you like. Wrap and place in the freezer (eating at least one before you do).

To reheat, it takes about a minute and a half to two minutes in the microwave (without any wrapping or packaging).
